Oat + Buckwheat Banana Bread

Banana breads are popular for a reason: they're wholesome, nutritious, and an absolute crowd pleaser, kids included.

Our Oat + Buckwheat version is loaded with hearty soaked grains, said to help control blood sugar levels and contain high levels of antioxidants, providing a superfood-boost of protein and fibre.

But the most appealing part of this recipe is that you can throw all the ingredients into a blender, whizz, and bake. Too easy. Less drama, more bananas!

Ingredients

INGREDIENTS
½ cup butter or olive oil
¼ cup honey or maple syrup
2 eggs, room temperature
3 overripe bananas
½ cup plain yogurt
¾ cup buckwheat groats (soaked for 3 hours, then rinsed)
1 cup steel cut oats (reduced to a flour in blender)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
*optional — throw in a handful of quality chocolate chips

METHOD Heat oven to 180 degrees. Place oats in a blender and blitz for one cycle so it resembles coarse flour, then put aside in a bowl. Next, place all ingredients into a blender, in this order: yogurt, eggs, honey, bananas, soaked buckwheat groats, baking powder, baking soda, butter and salt. Blend to a smooth, creamy consistency — two rounds on high should do this. Once blended, add to your bowl of oat flour, mix. Grease and line your loaf tin. Pour in mix and place in the oven. It should take between 45—60minutes, or till a knife comes away clean.
