Translated to 'Onion Peel Tea', Pyaaz Chaa is a warming brew commonly used in India as a home remedy for sneezing and flu-like symptoms. Usually tossed or discarded to the compost heap, the humble onion peel actually holds a wealth of nutritional benefits. Their high vitamin C content helps to nourish your skin, making it healthy and glowing from the inside out. 

Once softened and brewed with ginger, cinnamon, and honey, the onion adds a low hum of warmth to the flavour, and there's no need to worry about bad breath — actually once brewed, it could be hard to tell what this tea was made from.

We recommend sinking a cup of this amber tea in the afternoon sun for an end-of-winter cure-all.


Ingredients

  • 700mls of water
  • 2” knob of ginger (chopped into pieces)
  • Papery skins from 3 onions
  • 1 stick of cinnamon
  • 1 generous tsp of mānuka honey

Method

Pour water into a medium sized pot.

Add ginger, onions skins and cinnamon and gently simmer for 20 minutes. By this stage it should be a lovely amber colour.

Remove from heat and add Mãnuka honey. If it has a slight bitter taste, add a little more honey. It should be punchy, warming but not too sweet.
