2 Limes
1 Celery stalk with leaves
1 tbsp Honey
Chop the celery and add to a pot with the honey and half a cup of water.
Cook on low for 10mins. Taste to see if the celery has infused the honey syrup.
Add the juice of two limes and cool.
Place a little in a cup and serve over ice, add sparkling or still water.
Add more cordial until the desired sweetness/tartness is reached.
Will keep in the fridge for a few weeks.
