Summer afternoons crave a 'quench' and a 'zing'. Bringing together three local ingredients: lime, celery and honey, Carter Were of Were Bros shows us how to make a refreshing and natural cordial to serve guests in the heat of the day. Your kids will love it too. And, if you like, add a little gin to your own...


Ingredients

  • 2 Limes
  • 1 Celery stalk with leaves
  • 1 tbsp Honey

Method

Chop the celery and add to a pot with the honey and half a cup of water.

Cook on low for 10mins. Taste to see if the celery has infused the honey syrup.

Add the juice of two limes and cool.

Place a little in a cup and serve over ice, add sparkling or still water.

Add more cordial until the desired sweetness/tartness is reached.

Will keep in the fridge for a few weeks.
