Whether you’ve been driving in a car all day or basking in the sun, there’s nothing more quenching than a refreshing hit of ice-cold lime and ginger. To balance the bad with the good, we’ve combined a botanical gin with the benefits of fermented kombucha, gut-aiding ginger and restorative manuka honey.


Ingredients

[serves: 4 people]

  • London Dry Gin [infused with Lapsang Souchng]
  • Ginger kombucha
  • Ginger syrup*
  • Lemon juice
  • Ice cubes

*GINGER SYRUP

• 1 cup of manuka honey
• 6 inch piece of ginger [juiced]

Method

[5 mins]

Juice (or finely grate) ginger into a bowl, add in honey and blend.
Add ice to a glass tumbler.
Blend ginger syrup with rest of ingredients and pour over ice.
Serve with a dash of lemon zest over the top.
